Damson Liqueur

Damsons are a small, purple, member of the plum family and if you are lucky, can be found growing wild in Autumn. Most people just make them into jam but they are missing a trick!

Ingredients:

  • 600ml Vodka
  • 300g Damsons
  • 150g Granulated sugar

Slow Method:

  1. Rinse the damsons, prick with a fork and add to a Kilner Jar.
  2. Add the sugar and Vodka.
  3. Put into a cool dark place and leave for 3 weeks
  4. Shake the jar every day until the sugar has dissolved
  5. Strain into a clean bottle and test for taste. Add extra sugar if needed.
  6. Enjoy your Damson Liqueur

Fast Method:

  1. Rinse the damsons, prick with a fork and add to a Kilner Jar.
  2. Add the sugar and Vodka.
  3. Put into a water bath at 65°C for 3 hours.
  4. Strain into a clean bottle and test for taste. Add extra sugar if needed.
  5. Enjoy your Damson Liqueur

Mark’s Top Tip: Try substituting the Vodka for Gin, Rum, or Brandy. Do not discard the damsons, they make a wonderful boozy crumble and also taste great when served with ice cream.
