Damsons are a small, purple, member of the plum family and if you are lucky, can be found growing wild in Autumn. Most people just make them into jam but they are missing a trick!
Ingredients:
- 600ml Vodka
- 300g Damsons
- 150g Granulated sugar
Slow Method:
- Rinse the damsons, prick with a fork and add to a Kilner Jar.
- Add the sugar and Vodka.
- Put into a cool dark place and leave for 3 weeks
- Shake the jar every day until the sugar has dissolved
- Strain into a clean bottle and test for taste. Add extra sugar if needed.
- Enjoy your Damson Liqueur
Fast Method:
- Rinse the damsons, prick with a fork and add to a Kilner Jar.
- Add the sugar and Vodka.
- Put into a water bath at 65°C for 3 hours.
- Strain into a clean bottle and test for taste. Add extra sugar if needed.
- Enjoy your Damson Liqueur
Mark’s Top Tip: Try substituting the Vodka for Gin, Rum, or Brandy. Do not discard the damsons, they make a wonderful boozy crumble and also taste great when served with ice cream.
