Melon Liqueur

Melons are available all year round and look very tempting but are often too large to eat all at once so here is a great way to use up the whole fruit

Ingredients:

  • 700ml White Rum
  • 1 Melon
  • 200g Granulated sugar
  • 350ml water

Slow Method:

  1. Peel and chop melon, discarding seeds, and place in a Kilner Jar.
  2. Add the Rum
  3. Put into a cool dark place and leave for 3 days.
  4. Shake the jar every day until the sugar has dissolved.
  5. Strain fruit out, pressing down to extract liquid. Then, filter the mixture through a coffee filter or through two layers of cheesecloth.
  6. Combine sugar and water in a small saucepan and heat over medium heat, stirring constantly, until sugar is dissolved. Let syrup cool.
  7. Once the syrup is cool, combine it with the melon infusion.
  8. Strain into a clean bottle and test for taste. Add extra sugar if needed.
  9. Enjoy your Melon Liqueur

Fast Method:

  1. Peel and chop melon, discarding seeds, and place in a Kilner Jar.
  2. Add the sugar and Rum.
  3. Put into a water bath at 65°C for 3 hours.
  4. Strain into a clean bottle and test for taste. Add extra sugar if needed.
  5. Enjoy your Melon Liqueur

Mark’s Top Tip: There are a couple of different types of melon, some sweeter than others, so you may need to vary the amount of sugar depending on your choice of melon
