Melons are available all year round and look very tempting but are often too large to eat all at once so here is a great way to use up the whole fruit
Ingredients:
- 700ml White Rum
- 1 Melon
- 200g Granulated sugar
- 350ml water
Slow Method:
- Peel and chop melon, discarding seeds, and place in a Kilner Jar.
- Add the Rum
- Put into a cool dark place and leave for 3 days.
- Shake the jar every day until the sugar has dissolved.
- Strain fruit out, pressing down to extract liquid. Then, filter the mixture through a coffee filter or through two layers of cheesecloth.
- Combine sugar and water in a small saucepan and heat over medium heat, stirring constantly, until sugar is dissolved. Let syrup cool.
- Once the syrup is cool, combine it with the melon infusion.
- Strain into a clean bottle and test for taste. Add extra sugar if needed.
- Enjoy your Melon Liqueur
Fast Method:
- Peel and chop melon, discarding seeds, and place in a Kilner Jar.
- Add the sugar and Rum.
- Put into a water bath at 65°C for 3 hours.
- Strain into a clean bottle and test for taste. Add extra sugar if needed.
- Enjoy your Melon Liqueur
Mark’s Top Tip: There are a couple of different types of melon, some sweeter than others, so you may need to vary the amount of sugar depending on your choice of melon
