Passionfruits are small and wrinkly and look hard to deal with but we think we have found the ideal use for them…
Ingredients:
- 700ml Vodka
- 12 Passionfruit
- 200g Granulated sugar
- 350ml water
- Vanilla bean, scraped
Slow Method:
- Scrape out the pulp from the passionfruit and add to a Kilner Jar.
- Add the vanilla seeds and Vodka.
- Put into a cool dark place and leave for 30 days.
- After 30 days, make a syrup by mixing the water and sugar and heating until dissolved. Let the syrup cool down completely.
- Filter the fruit mixture to remove the seeds and mix with the cold sugar syrup.
- Pour into a jar and let it rest in a dark place for another 15 days.
- Strain into a clean bottle and test for taste. Add extra sugar if needed.
- Enjoy your Passionfruit Liqueur
Fast Method:
- Scrape out the pulp from the passionfruit and add to a Kilner Jar.
- Add the vanilla seeds, sugar and Vodka.
- Put into a water bath at 65°C for 3 hours.
- Strain into a clean bottle and test for taste. Add extra sugar if needed.
- Enjoy your Passionfruit Liqueur
Lucy’s Top Tip: Try substituting the Vodka for Gin, Rum, or Brandy. Don’t discard the fruit once you have strained it from the alcohol, it makes a really nice ice cream topping.
