Pineapples make us think of holidays in the sun, laying by the pool with a drink in your hand. Why not give this liqueur a go and you can experience that exotic drink at any time in your own back garden!
Ingredients:
- 700ml Brandy
- Really Ripe Pineapple
- 250g Granulated sugar to 450g Pineapple
- 2 Cloves
Slow Method:
- Peel Pineapple and chop into small cubes and add to a Kilner Jar.
- Add the sugar and cloves, cover with brandy.
- Put into a cool dark place and leave for 2 weeks.
- Shake the jar every day until the sugar has dissolved.
- Strain into a clean bottle and test for taste. Add extra sugar if needed.
- Enjoy your Pineapple Liqueur
Fast Method:
- Peel Pineapple and chop into small cubes and add to a Kilner Jar.

- Put into a water bath at 65°C for 3 hours.
- Strain into a clean bottle and test for taste. Add extra sugar if needed.
- Enjoy your Pineapple Liqueur
Lucy’s Top Tip: Try substituting the Brandy for Gin, Rum, or Vodka. The spiced pineapple can then be used as a dessert and tastes great when served with ice cream. You could also try gently heating the pineapple and sprinkling it with cinnamon sugar.
