Not many people know much about Quinces but they can be made into a very nice fruit preserve. They can also be used to make an interesting liqueur so, if you know someone with a quince tree, you might want to get to know them better!
Ingredients:
- 700ml Vodka
- 600g Quince
- 2 Lemons, zest and juice
- 300g Granulated sugar
Slow Method:
- Rub Quince with a kitchen towel really well until skin is smooth. Cut unpeeled quince into small cubes and add to a 1l Kilner Jar.
- Add the sugar, vodka, lemon zest and 180ml lemon juice.
- Keep in a warm place or on a sunny windowsill for 4 weeks.
- Shake the jar every day until the sugar has dissolved
- Strain into a clean bottle and test for taste. Add extra sugar if needed.
- Allow to mature for 6 weeks in a cool place
- Enjoy your Quince Liqueur
Fast Method:
- Rub Quince with a kitchen towel really well until skin is smooth. Cut unpeeled quince into small cubes and add to a 1l Kilner Jar.
- Add the sugar, vodka, lemon zest and 180ml lemon juice.
- Put into a water bath at 65°C for 3 hours.
- Strain into a clean bottle and test for taste. Add extra sugar if needed.
- Enjoy your Quince Liqueur
