Raspberries can be found nowadays at any time of the year but the absolute best are those which are picked in season and grown in the UK. Keep an eye open for reduced counter bargains. If need be, you can always freeze the raspberries until you can use them. Raspberries will go with any other “forest fruit”
Ingredients:
- 700ml Vodka
- 500g Raspberries
- 200g Granulated sugar
Slow Method:
- Rinse the raspberries, cut in half, and add to a 1l Kilner Jar.
- Add the sugar and Vodka.
- Put into a cool dark place and leave for 3 weeks.
- Shake the jar every day until the sugar has dissolved.
- Strain into a clean bottle and test for taste. Add extra sugar if needed.
- Enjoy your Raspberry Vodka
Fast Method:
- Rinse the raspberries, cut in half, and add to a 1l Kilner Jar.
- Add the sugar and Vodka.
- Put into a water bath at 65°C for 3 hours.
- Strain into a clean bottle and test for taste. Add extra sugar if needed.
- Enjoy your Raspberry Vodka
Mark’s Top Tip: Try substituting the Vodka for Gin, Rum, or Brandy. The colour will leach out of the raspberries turning them a light shade of pink, they are still edible and taste great when served with ice cream.
