The Basic Technique

Carefully clean out your steeping container. We find that a wide mouth jar such as a Kilner or Mason jar is the best.

Slice up your fruit so that it fits easily into the jar.
Add the sugar.
Add in any other flavourings your recipe calls for.
Top up the jar with your spirit of choice, leaving 12mm headroom.
Seal the jar and place it into your water container with the sous vide.
Set the timer and temperature (3 hours at 65°C, 149°F is advised) and press the start button.
When the sous vide has finished remove the jar from the water bath and strain the liquid back into your original spirit bottle. Allow to cool before tasting and if required add extra sugar to taste.
